feel good Friday: Salsa for lunch.

Oh yum.
I know, I am doing food again.
But this salsa salad does make me feel good because it is so fresh and yummy.
Two of the best qualities combined in life are little sweet and a little spicy.
I want my kids to be sweet. But when they show a little spice I breath a sigh of relief because they need a little fire if they are going to survive long in life.

I've been playing with food a lot lately.
And this combo originally made me a tiny bit doubtful, because I wasn't sure I'd like a melon salsa.
But this is actually oh so good.
You can eat a whole bowl of it for lunch and not even feel a little bit guilty because it's fresh and healthy too.
Cucumber and Melon Salsa Salad:
1/2 of a cantaloupe, cubed
1 English cucumber (de-seeded and cubed)
1/2 of a orange bell pepper
1/4 Cup red onion finely chopped
1 small jalapeno (de-seeded, and chopped tiny finely)
1 lemon (use all of it's juice. about 1/3 cup)
2 Tablespoons olive oil
Chopped parsley OR
Chopped cilantro (depending on which flavor you like better)
when I use cilantro I also throw in a handful of chopped green onion
Salt
Pepper

So chop everything up, throw it in a bowl and top with the lemon juice, olive oil, salt and pepper.

A bowl of this salsa salad makes me perfectly happy for lunch.
But if you want to have it for dinner and add a little more bulk, 
then grill a white fish fillet and put it on top.
Delicious together!
(we used frozen Mahi Mahi that we get at Costco and come in individual fillets. Thaw, add a tiny rub of olive oil salt and pepper and throw on your inside grill or pan)

  1. i wish i ate fish! and i wish i like melon! this looks delicious and fresh and yummy but i would never be able to eat it! and i mean that in a good way. like.. that i'm totally jealous that i couldn't eat it.. not that i think you're gross for eating it. does that make sense?

    and yes - a little spicy flare is necessary to get through life. ;)

    1. well, the melon with the lemon and other flavors changes the way the melon tastes...so maybe you'd like it? Skip the fish! I usually do!
